Sour Plum Drunken Chicken Wings

Ingredients:

600 ml of Shaoxing wine, 12 chicken wings, 10 dried plums, 2 star anise, 1 chili, 5 slices of ginger, appropriate amount of scallions, appropriate amount of salt

Method:

1. First, blanch the chicken wings.

2. Add ginger slices, scallions, and salt, then cook the chicken wings until done.

3. Add water, Shaoxing wine, dried plums, star anise, chili, ginger slices, and scallions, and boil for 10 minutes to let the dried plums infuse.

4. Pour into a large bowl, then soak the chicken wings.

5. After cooling, wrap with plastic wrap and place in the refrigerator for about 6 hours to let the chicken wings absorb the flavor.
